Pancake Day!

If like me you love a good fluffy pancake drizzled in syrup and topped with delicious fresh fruit, read on for a great easy recipe for today... or any day!

Buttermilk Pancakes


135g plain flour
1 tsp baking powder
50ml buttermilk
1 large egg
130g milk
2 tbsp caster sugar
1/2 tsp salt
2 tbsp melted butter
1 large egg lightly beaten

  1. Sift flour, salt, baking powder and sugar into a bowl. Next, in a separate bowl mix the wet ingredients together; milk, egg, butter milk and melted butter and whisk
  2. Add the milk mixture into the dry ingredients and using a hand whisk or fork mix until combined to form a smooth batter
  3. It's a good idea to let the batter stand for a few minutes here
  4. Over a medium heat, heat up a non stick pan and add a small amount of butter
  5. Once the butter has melted add a ladle of batter to the pan, once tiny bubbles begin to form and it is cooked on one side, flip over until both sides are golden brown
  6. Serve with maple syrup, blueberries, raspberries, strawberries and bananas.. or anything else that takes your fancy!
